冰糖凝甜意，一串赴流年——冰糖葫芦

冰糖葫芦，是刻在中国人童年记忆里的甜蜜滋味，是跨越八百年岁月的传统小吃，藏着中式最纯粹的甜，藏着岁岁年年的人间温柔。这道美食诞生于南宋光宗年间，距今已有八百余年历史，最初是宫廷御医为食欲不振的皇妃创制的食疗甜品，口感酸甜开胃、健脾消食，后来传入民间，成为家喻户晓的经典小吃，流传至今，经久不衰。
老式冰糖葫芦，最讲究食材新鲜、工艺纯粹。选用饱满红润的新鲜山楂，去核洗净、沥干水分，颗颗圆润饱满、果肉紧实。竹签串起山楂，整齐排列，简约质朴。熬糖是最关键的步骤，把控火候至关重要，冰糖加水小火慢熬，不停搅拌，直至糖浆融化浓稠、色泽透亮，熬至拉丝状态，不糊不苦、清甜纯粹。
将串好的山楂快速裹满糖浆，平铺冷却，待糖浆凝固成型，一层晶莹剔透的糖壳便包裹住鲜红山楂。成品冰糖葫芦，红果莹白、色泽鲜亮，糖壳薄脆透亮，宛如琉璃玛瑙，颜值十足。轻轻咬下，糖壳咔嚓酥脆，清甜不腻，内里山楂酸甜多汁、果肉绵软，甜与酸完美交融，中和得恰到好处，甜而不齁、酸而不涩。
岁月流转，冰糖葫芦的花样不断翻新，草莓、葡萄、橘子、山药等新式口味层出不穷，但最经典的山楂冰糖葫芦，依旧是人心底最难忘的味道。大街小巷的叫卖声，一串酸甜糖葫芦，串联起几代人的童年记忆。这一抹古朴的中式甜，不浓烈、不张扬，温柔绵长，治愈时光，岁岁年年，甜润人间烟火。
